I had trouble deciding what my inaugural food entry should be so I went with my current breakfast obsession: Country Eggs Benedict. What is a Country Eggs Benedict you ask? A combination of biscuits & gravy and eggs benedict- the best of both worlds really. In place of canadian bacon there is a sausage patty (preferably maple sausage) and in place of the english muffin there are two big biscuits. Gravy is poured over the whole thing. I'm not quite sure what makes it "country," perhaps hollandaise sauce is considered too frou-frou for most folks. I took this particular photo at the Downtown Diner in Flagstaff, AZ but I have also had a good one at The Egg Connection in Tucson, AZ. Someday soon I will attempt to make this at home- stay tuned.
